Ingredients:
1 1/2 sticks margarine, softened, divided
1 box chocolate chip cookie mix (16 oz)
2 cups rice krispies cereal
1 14 oz. bag caramels (about 50)
1/4 cup heavy whipping cream
1 tsp. Vanilla
1 egg
Directions:
Preheat oven to 375 degrees. Grease an 11x7 in. baking dish with cooking spray. Beat 1 stick of the butter and egg in a bowl for 30 sec. Add cookie mix and beat together until well blended. Gently stir in cereal. Remove 1 1/2 cups of dough, set aside for later use. Press remaining doe into pan and bake 13-15 minutes until light golden brown.
Now place remaining 1/2 stick butter, caramels, and whipping cream into a saucepan. Cook over low heat for about 10 minutes or until caramels are completely melted and mixed. Stir constantly, remove from heat and add in vanilla. Pour over crust. Drop the remaining cookie dough in crumbles over the caramel mixture. (Do not spread dough) Bake 20 minutes. Cool 2 hours and serve.
This is my kind of dessert...caramel, caramel, and caramel. Serve it with a scoop of vanilla ice cream.
