Pumpkin Bars
Thanks to Jen for this recipe. I am not a big fan of pumpkin anything, but these are very tasty and don't have a strong pumpkin flavor. So if you are in the same boat try them out. I made these for Thanksgiving this past year and everybody loved them.
PUMPKIN BARS
Ingredients:
1/2 cup butter or margarine
1 cup brown sugar
2 tsp. Vanilla
1 1/2 cups flower
1/2 tsp. baking soda
2 1/2 tsp. pumpkin spice
1 cup sugar
1 lb. can Pumpkin (1 1/2-2 cups)
4 eggs
1 tsp. baking powder
1/4 tsp. salt
1 cup raisins or chopped nuts (optional)
Directions:
Preheat oven to 350 degrees. In a large saucepan, melt butter. Stir in sugars, pumpkin, vanilla, and eggs. Beat well. Stir in remaining ingredients until well mixed. Pour into greased 15x10 in pan or a cookie sheet if you double batch. Bake 20-25 minutes or until top springs back slightly when touched. Cool. Frost with Cream Cheese Frosting or sprinkle with powdered sugar.
CREAM CHEESE FROSTING
Ingredients:
1 8oz. pkg cream cheese
4 cups powdered sugar
1 stick butter, softened
1 tsp. vanilla
Directions:
Mix cream cheese and butter together in a bowl or an electric mixer. Add powdered sugar and vanilla and mix until you get the consistency you like. Add a little milk to the frosting while mixing it if you like it creamier.
