Chocolate Cupcakes with Cream Cheese Frosting


These cupcakes are fluffy and very tasty. Way better than a box mix.

Cupcakes

Ingredients:

3/4 cup cocoa powder
3/4 cup hot water
3 cups flour
1 tsp. baking soda
1 tsp. baking powder
3/4 tsp. salt
3 sticks unsalted butter
2 1/4 cups sugar
4 eggs
1 cup sour cream
2 tsp. vanilla

Directions:

In a pan on low mix together water and cocoa powder until smooth. In a seperate bowl mix together flour, baking soda, baking powder, and salt. In a mixer combine butter and sugar until creamy then add cocoa mixture. Mix until smooth and add eggs and vanilla. Slowly add flour but don't over mix. Fold in sour cream at the end and pour into cupcake tins. Makes 24 cupcakes.

Cream Cheese Frosting

1 8 oz. pkg cream cheese
1 stick unsalted butter
1 lb. powdered sugar
1 tsp. Vanilla extract

Directions:

Combine together in a mixer and that's it. Add food coloring.
