Try this classic with a Tex-Mex twist. I tried these quesadillas a couple days ago and they were a hit. I think i will be having these more often.
8 medium flour tortillas
4 oz. Peppered Turkey
1 chipotle chile chopped (I used chipotle ranch instead)
1/2 cup sour cream
4 plum tomatoes
8 slices of cooked bacon (or turkey bacon)
2 cups shredded monterey jack cheese
1 cup shredded romaine lettuce
Guacamole and salsa as sides
Place 4 tortillas on a work surface. Top each tortilla with turkey, chile (or chipotle ranch), sour cream, tomatoes, bacon, cheese, and lettuce, dividing evenly. Place a second tortilla on the top of each one. Heat each stuffed quesadilla in a skillet flipping the sides until the cheese is melted. Top with guacamole and Salsa.
