Chicken Enchiladas

If your looking for an easy mexican dish to make for dinner, these Enchiladas are always a favorite. They are really easy to make and taste even better the next day.


Ingredients:


1 can. chicken broth
2 cans cream of chicken soup
2-3 cans of chicken (or 2-3 shredded chicken breasts)
2 cups sour cream
1 small can diced green chilis
1 bag cheddar and monterey jack cheese
1 pkg. burrito size tortillas


Directions:

Mix in a bowl wet ingredients along with chicken and chilis. Fill each tortilla with filling roll up the enchiladas folding in the edges and place in a cooking pan. Use remainder sauce to cover the enchiladas. Sprinkle dish with cheese and bake at 350 for 30-35 minutes until cheese is melted.


Serve with lettuce, salsa, and tortilla chips.
