Potato Salad



I know there are a hundred versions of this out there, but i wasn't a big fan of Potato Salad until i tried this one and now i love it.

Ingredients:

10 cooked potatoes, cooled and cubed in small pieces
5 hard boiled eggs chopped
6 sweet midget pickles diced
2 cups of light mayo
1 tbsp. Mustard
3 tbsp. pickle juice
Paprika

Directions: Add to a bowl diced potatoes, eggs, and pickles. Then in a separate bowl mix mayo and mustard. Combine the wet ingredients to the potatoes and fold gently, not to mash the potatoes. Finally add the pickle juice fold again, and refrigerate for at least 30 minutes. Then when your ready to serve, sprinkle paprika over the potatoes.

Serves: A crowd
