Chicken Taco Rice


1 lb. Chicken, cut into strips
1 can chicken broth
1 8 oz. tomato sauce
1 pkg. taco seasoning
1 12 oz. can corn
1 med. green or red pepper cut into thin strips
1 1/2 cups minute rice
1/2 cup shredded cheese


Cook and stir chicken in a pan. Add broth, tomato sauce, and seasoning mix, bring to boil. Reduce heat and cover and simmer for 5 minutes. Add corn and peppers and bring to boil again. stir in rice and then cover and remove from heat. Let stand for 5 minutes. Serve with cheese, tortilla chips, and sour cream. Serves 4
