Layered Salad

I got this recipe from my mother in-law, Ruthie. It has become one of my favorite salads it's just soo good!

Ingredients:


1-2 cups Frozen Peas rinsed in warm water
1 pkg. Bacon cooked and diced (can use Turkey Bacon)
2 cups fresh Spinach
2 green onion, diced
1 head of Romaine Lettuce
2 cups shredded swiss cheese

Dressing:

1 1/2 cups mayonnaise
1 tsp. salt
1 tsp. pepper
1 tsp. sugar
1/2 tsp. garlic powder
1 tbsp. Salad Supreme

Directions:

In a large bowl mix the dressing into the lettuce then layer all other ingredients on top. Toss together right before serving.

Wontons


I learned this recipe from my Mother-in-law. She has all these Chinese recipes that are really good and she shared them with me. Lucky for you she is letting out all her secrets. These little wontons are very good. I find myself just wanting to eat these when we have Chinese night because they are so flavorful.

Ingredients:

1 lb. Ground chicken, pork, or beef
4 green onion, chopped
1 can water chestnuts drained and chopped fine
1 clove garlic chopped
1 egg
1 tbsp. Soy sauce
1 tbsp. cornstarch
1 pkg. Wonton skins

Directions:

Mix all ingredients together in a large bowl. Place 1 tsp. of mix in the corner of the skin. Wrap by the folding sides in and rolling to the edge. Wet the end with a dab of water to seal. Fry on medium low for a few minutes until golden brown. Keep warm in oven. One package of wontons gives you atleast 50 so it makes enough for one family. If you are making for a large crowd double or triple recipe.
Sweet N Sour sauce
1/2 cup sugar
1/3 cup vinegar
2/3 cup water
2 tbsp. cornstarch
4 tbsp. ketchup
Bring to boil sugar, vinegar, and water. Add cornstarch mixed with water to thicken. Stir until thick then add ketchup. You can add pineapple juice also for a little more sweetness. Let cool before serving.

Lettuce Wraps


Ingredients:

1 lb. Ground Chicken, pork, or beef
4 green onion, chopped
1 can water chestnuts, drained and chopped
1 egg
1 tbsp. soy sauce
1 tbsp. cornstarch

Sauce
1 bottle Plum Sauce
2 tbsp. Hoison sauce
mixed

Directions:

Add all ingredients and mix lightly. Be careful not to over mix ground meat or it gets tuff. Heat a skillet and cook the meat mixture. Add 1 cup of sauce and save the rest for people to put on themselves. So good!

Pot Stickers


Ingredients:

1 lb. Ground chicken, pork, or beef
4 green onion, chopped
1 can water chestnuts, drained and chopped
1 clove garlic, chopped
1 egg
1 tbsp. Soy sauce
1 tbsp. cornstarch
1 tbsp. ginger
4 cups chopped cabbage
1 pkg. round wonton skins

Directions:

Mix all ingredients together and place 1 tsp. of mixture in the middle of the wonton paper. Wet the edge and fold in half and pinch. Heat skillet with oil and fry on med low until golden brown.

Sauce

1/4 cup vinegar
1/4 cup soy sauce
1 tsp. sesame oil
1 tsp. sesame seed

Olive Garden's Zuppa Toscana


This is another one from my Mother in-law.

Ingredients:

1 lb. Italian Sausage
1/2 lb. Smoked bacon chopped
1 qt. water
2 14 oz. cans chicken broth
2 Lg. potatoes diced
2 garlic gloves crushes
1 med onion chopped
2 cups kale or Swiss chard chopped
2 cups heavy cream
salt & pepper

Directions:

Cook sausage and crumble as you go. Remove from pan and cook the bacon and remove. Add water, broth, potatoes, garlic, onion and simmer in the pan until potatoes are tender. Add meat and simmer an additional 10 minutes. Add kale, cream, and salt & pepper at the end.

Fudge Macaroon Pie


This is a rich recipe given to me by my Mother in-law for my husbands sweet tooth.

Ingredients:

3 Squares unsweetened baking chocolate -or- 9 tbsp. baking Cocoa
1/2 cup butter or marg.
3 egg beaten
3/4 cup sugar
1/2 cup flour
1 tsp. vanilla
2/3 cup condensed milk
2 2/3 cup coconut

Directions:

Melt chocolate and butter on low heat. Stir in sugar and vanilla. Take off heat and add the beaten eggs. After combined add the flour and mix. Pour into a 9 inch uncooked pie crust of your choice. In a separate bowl combine the condensed milk and coconut. Spoon over pie leaving 1/2 inch space from the edge so it can expand during baking. Bake at 350 degrees. 30 minutes.

Deshebrada




Ingredients:

1 4-5 lb. beef roast
1 28 oz. can Herdez Salsa Casera Mexican Picante (can find it in local grocery store like walmart)
fresh uncooked tortillas

Directions:

Place roast in a crockpot. Season and fill up with water or broth completely. Cook on low for 10-12 hours over night. Then drain water and shred beef. Add the whole can of Picante salsa and set on high for 1 hour. Serve on hot fresh tortillas (preferably the uncooked fresh ones at Costco or homemade).  I've got my whole family hooked on it. You don't put anything else on it, but if you want to you can add lettuce or salsa. So good!

Grandma Robinson's Enchilada's




Ingredients:

1 cube butter
4 garlic gloves, chopped
1-2 tbsp. Chile powder
2 quarts water
1 tbsp. sugar
1 sm. can tomato paste
1-2 tbsp. Puree de tomato bouillon
dash cumin
dash oregano
for heat add 1 can pato sauce (opt)
flour for thickening

Directions:

Melt butter and add garlic to saute, then add Chile powder and cook for one minute. Add water and the rest of ingredients. Add water to flour to make a paste to thicken. Layer your enchiladas with cheese and chicken and tortillas cook in the oven until cheese is melted.

Chipotle Ranch


I put it on everything from Salads, chicken tacos, to wraps. One of my favorite things is trying out new Salad dressings, this one is so good and takes 2 minutes.

Ingredients:
1 pkg. Hidden Valley Ranch original
1 cup mayo
1 cup milk
1 tbsp. Chipotle Peppers in Adobe sauce pureed

Directions:

Combine packet ingredients together in a bowl, puree chipotle peppers .(I like to use a food processor) Add it to the ranch and mix together then refrigerate. That's it! You will crave this all the time i promise. If you like it hotter add more of the chipotle puree, a little goes a long way.

The brand i buy is in the picture above you can find it in the Mexican isle. Also Chipotles are nothing more than smoked jalapenos in adobe sauce which is vinegar and seasoning.
