Jalapeno tortilla chicken wraps

Yum! these were really good especially with the quick salsa you can make to add to it.

Ingredients:

3 chicken breasts, cooked and shredded
1/2 tsp. chili powder
1/4 tsp. garlic powder
1 small red pepper, diced
2 tbsp. ranch dressing
1/3 cup shredded cheddar cheese
1/2 cup homemade salsa
1 pkg. Jalapeno tortillas

Salsa:

2 tomatoes, seeded and chopped
1/4 cup red onion, chopped
1/4 cup green pepper, chopped
3 tsp. cilantro chopped
1/2 tsp. minced garlic,
1/8 tsp. salt
1/8 tsp. pepper
Serve immediately or cover and chill for up to 3 days.

Directions:
After the chicken is diced and cooked, warm up chicken in skillet and season with chili powder and garlic powder. Add peppers and cook for 3 minutes. Turn off heat and toss ranch dressing in the chicken mixture. Fill tortillas with chicken, homemade salsa, and cheese. Roll up and cut in half.

Quick Salsa


I can't take any credit for this recipe. Thanks to a friend, Shanell i tried her salsa and loved it and it's so easy to make come to find out.


Ingredients:


1 Lg. can Whole tomatoes
2 bunches green onions, chopped
1 6 oz. diced green chile's
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. crushed red pepper
1 tsp. red chili pepper
1 tsp. garlic powder

Directions:

Add spices with tomato juice drained from the can. Blend well. Add tomatoes, green onions, and green chile's. Blend for a few seconds only. Refrigerate.

Corn Salsa


This is another really good recipe i had at a bbq recently. I think i might be making this a lot. It was soooo good!! I even think it would taste good on tacos as well.

Ingredients:

1 can black eyed peas drained
1 can white corn drained
1 can petite yellow corn drained
2-4 green onions split in half; then chopped
5 roma tomatoes chopped
1-2 Avocados chopped
handful of Cilantro, chopped
1 pkg. Good Seasons Italian Dressing Mix

Directions:

Mix dressing as directed in a seperate bowl. Tip: use Mazola Oil or Cider Vinegar in dressing mix. In a large bowl mix all ingredients well then add the dressing on top. Serve with tortilla chips.

Cowboy Bean Salsa



My Mom makes this bean salsa to die for! It's got to be the easiest salsa to make and everyone loves it. It goes really good with Turkey sandwiches and your favorite tortilla chips.

Ingredients:

1/2 bottle Kraft Free Catalina Dressing (less calories)
1 can Black beans drained
1 can kidney beans drained
1/2 of a green pepper chopped in small pieces
2 Roma tomatoes chopped in small pieces

Directions:

Add all ingredients into a bowl. Mix in half of the dressing and that's it! If you are serving a large crowd double the batch.
