I love this stuff. I'm not a fan of grapes in my chicken salad so this is a good alternative.
Ingredients:
4 chicken breasts boiled and shredded (or rotisserie chicken shredded)
2 cups mayo
1 cup whipping cream
4 cup celery, chopped
1 tsp. salt
1/2 tsp pepper
1 cup slivered almonds, chopped
Directions:
Combine celery, salt, pepper, mayo almonds, and chicken. Whip the cream until very stiff almost butter-like then fold half of it into the chicken salad. Add more if needed. Fill croissants or a scoop onto a lettuce cup.
